不论发生什么我一定能行
No matter what happens, I could do this.
有时候你需要相信你自己
At some point, you need to trust yourself.
而说到烹饪...
When it comes to cooking...
更是毫无疑问
there's no more doubt.
或许是文化原因...
Because of my culture...
我不太喜欢去说一些响亮而大胆的慷慨陈词
I'm uncomfortable with trying to make loud, bold statements.
我只会将它们体现在食物中
I could do that in the food.
我的食物是极端地体现出了我的风格
The food can be an egomaniac.
时而张狂时而具有侵略性
It could be loud. It could be aggressive.
所有我的品格都可以体现出
It could be all these things
我不是个安于现状的人
that I personally am not comfortable being.
这促成我满脑子疯狂的想法和实验
It allows me to have crazy ideas or experiment,
不墨守陈规
to not follow the rules.
某种程度上她不是为了证明什么
At this point, she's not trying to prove anything.
她雕琢着自己的路
She's carving her own path.

There are certain things
在传统的怀石料理中是体现不出来的
that in traditional kaiseki would not be done.

Her signature dish is one of them.
这道意大利面食叫做強肴
The pasta dish, it's called shiizakana,
意思就是 "不被传统束缚厨师的意志"
which is translated, "Not bound by tradition, chef's choice."
感受过日本怀石料理的人们
People who have experienced kaiseki in Japan,
都会对我
they might find it
把这个融进我的料理中而感到疑惑
questionable that I should put this into our meal.
但是我想做的是真正有我风格的料理
But I wanted to do something that was very me.
强肴青花鱼意面
sashimi (さしみ): 就是我们一般所说的生鱼片,将生的鱼类/贝类/甲壳类等海鲜切成薄片,配以酱油/芥末等食用的料理。
tsukuri (造り) 与 sashimi (さしみ): 意思是相同的,多指现做的,或以特殊形式现场制♥作♥的生鱼片。

开胃菜鸭肉, 无花果与酸橘汁腌鱼
我一周去她的餐厅两次
两次看的是完全不同的菜单
这么做并不简单但她像是毫不费力地完成了
她让我感到惊喜
真的是无与伦比
在我早期的职业生涯中
Earlier in my career,
我的动机大概是"我要证明我自己"
the motivation was that feeling that, "I have to prove myself."
但是现在看...
But at this point...
我对烹饪的感觉
the whole feeling for
已经转换到另一个不同的层面了
cooking has shifted into something different.
我更多地是为我自己乐在其中...
I'm enjoying this work more for myself...
没有考虑去取悦别人
without thinking about pleasing people.
现在我拥有的一切
Everything that is happening
正是我以前曾梦想拥有的
to me now is something that I've always dreamt of.
我时常提醒我自己
I constantly remind myself that
我必须要真真实实地踏踏实实地活在当下融入进去...
I have to really, really live it, to be in it...
