It's an Italian quesadilla.
在2004到2005年间 我的婚姻已经分崩离析了
By 2004-2005, my marriage was falling apart.
作为家长这部分已经很艰难了
Being a parent is hard enough,
作为生意伙伴也一样很艰难
and being a partner in a business is also very hard.
到处都是硝烟
There was a lot of tension,
对我们身边的朋友来说简直就是噩梦
and it wasn't good for the people around us.
我以前经常说
I used to say, you know,
"身边有人信心满满地看着我承受来自四面八方的压力
"This is pretty great that here's someone that is confident enough
而这根本不会给他带来任何烦恼
that sees me getting all this attention,

but it doesn't bother him."

But I'm not sure how accurate that was.
可能从最开始... 就开始积怨了吧
I think that there was resentment... from the beginning.
我们还是决定离婚了
We made the choice to get divorced.

I wasn't ready to leave Campanile emotionally.
我投入了这么多
I mean, I had put so much into it.
可我不是主厨 马克才是
But I was not the executive chef there, Mark was.

And one of us had to go.
所以我离开了餐厅
So I left the restaurant.
我当时不知道要做什么
I had no idea what to do.
所以就回到了意大利
So I went back to Italy.
当时对我来说 艰难的不是失去了那段感情
It was not a loss of my relationship that was difficult for me.
而是我失去了钟塔餐厅
It was the loss of Campanile.
那还是从我21岁开始
It was the first time since I was 21 years old
第一次没有工作
that I had not worked consistently.
我形孑然一身
I was alone.
我回顾了自己的厨艺生涯
I took a step back from cooking.
我当时在想"我怎么才能东山再起呢"
I just thought, "How am I going to rebuild what I lost?"
在那个夏天 我花了大把时间游历于乡村之间 尝遍各个角落
That summer, I'd spent time traveling and eating in the countryside.

One day, I ran into a friend of mine, Jeremiah Tower.

I said, "Why don't you come over for lunch?"

I wanted to make something that was simple enough

that I wasn't chained to the kitchen.

And I had bought a few varieties of fresh mozzarella.

And I spent a few hours coming up with all sorts of little condiments

that would complement the cheese.

As we were visiting, he said, "You know, there's a place in Rome I just went to.

So I went to see Obica.
当我走进店里 坐在吧台前时
When I walked in and sat down at the counter,
吧台后的一个人在用不同的马苏里拉芝士
someone behind that was doing all sorts of different things
做着各种不一样的事
with different types of mozzarella.
给我的感觉像是在做寿司
It was like the experience of making sushi,
只是把芝士当做底板一样使用
but using cheese as the canvas.
我当时立即...
I immediately...
就知道这就是我想做的
knew that this was what I wanted to do.
我想要个能让我在上面做菜的小小吧台
I wanted that little counter that I would work behind,
所有的一切都是我自己做的
and that everything that I was doing was something that I made myself...
就像我刚开始在拉布瑞面包店一样
just like when I started La Brea Bakery.
但这一次 我对奶酪着了魔
But this time, my obsession became cheese.
在当我回到洛杉矶的时候 我开了家莫扎小馆...
And when I came back to Los Angeles, we opened Osteria Mozza...
这样我就有了三家不同的餐厅
which turned into three different restaurants,
每一家都展现了南茜不同的一面
each one a showcase of a little bit of Nancy.
但是我的操作空间还是马苏里拉小吧台
But my space is the mozzarella bar.
我得到了两全其美的东西
I get the best of both worlds.
我在跟大家聊天交流的同时 还可以一边创作
I get to socialize, but I also get to create.
马苏里拉小吧台有着独天德厚的优点
There's something great about the mozzarella bar and her place in it.
我觉得南茜最开心的事情就是
I don't think Nancy is ever happier
被十几个朋友围绕着
than when she's surrounded by a dozen of her friends
桌子上摆着她刚做的佳肴
and food that she's made is on the table
大家都在喝着红酒
and everybody's drinking red wine.

南茜变成了美味女神
Nancy has become the goddess of the delicious.
她可能根本没考虑跻身伟大名厨的名人堂
She probably doesn't think of herself in the pantheon of great chefs.

I don't think she sees it as a competition anyway.
-就好像她根本不在乎 -她不是为了赢才进入美食界的
- Like, she doesn't really care. - She's not here to win.
她只是来展现自己的内心世界
She's here to express her inner being.
几年前
Several years ago,
我获得了詹姆斯·比尔德杰出大厨奖提名
I was nominated for a James Beard Award for Outstanding Chef.
我去了颁奖典礼 宣布我获胜了
I went to the ceremony, and it's announced that I won.
然后我走上台 看到了乔纳森·韦克斯曼...
And walking up and seeing Jonathan Waxman...
我的导师 坐在观众席上 这让我感觉非常非常不舒服
my mentor, in the audience, made me feel very, very uncomfortable.
我当时特别想说"我为什么会在这里 而不是乔纳森呢"
What I really wanted to say is, "Why am I here, and not Jonathan?"
我不是那类厨师
I'm not one of those kinds of chefs.
我没什么想象力...
I am not imaginative...
也不精于技术 我也从来不创新
I'm not technical, and I'm not doing anything new.
我只是做出早就有的菜 再把它个性化一点
I take dishes that have already been done and I personalize them.
跟大家一样 我也有排班表
I'm on the schedule, just like everybody else.
我也正常地去上班
And I show up and I do my job.
有顾客晚上到店里看到我的时候
When people come in at night and they see me,
他们会说"简直不敢相信你还在工作
they say, "I can't believe you're still working.
你已经62岁了
You're 62.
什么时候才会退休啊"
When is this gonna stop?"
我的回答是 永不停歇
And, that would be never.
