Two hours, 15 minutes isn't a ton of time to really get a ton of flavor inside a chicken,

so I plan on doin' it two ways.

I'll get one goin' on the smoker, and I'm quick broiling one.

That brine, that broil, is full

So, that way, I can make sure I've got very, very tender,

uh, with a Mexican crema.

Jamaica's not known for sandwiches,
