Barbecue has taken over my life on many levels.

For this challenge today, I'm gonna make a whole beer-brined chicken
‪内填辣椒
stuffed with peppers,
‪墨西哥青辣椒凉拌卷心菜
a jalapeÃ±o coleslaw,
‪醉豆然后我们再做一点 ‪狮子唐辛子鳄梨酱
borracho beans, and then we're gonna do a little shishito guacamole.

I love that sound.

Looks like Cindy
‪拿了一些超级辣的辣椒 ‪在木炭上烤制
is taking some of her super-hots and cooking them on a charcoal.

That's actually a very smart move.

Roasting peppers takes out some of that heat.

I think some oil's gonna come out,

and all that sweetness that's inside should pop out.

Yesterday, we're an hour into the cook, Cindy had nothing.

So last challenge, I barely made it through. I squeaked through that thing.

I have to dig deep,

What I'll be making today is birria beef cheek tacos,

With my homemade spicy lava cake.

Right now, I'm workin' on my chorizo.

I'm using some dried peppers

to spice my chorizo up.
‪我用了一些烟熏红辣椒粉
And I'm using some smoked paprika.
‪我要用醋来控制辣度
And I'm gonna use vinegar to tame the heat.
‪我想要一点辣度但不想杀死评委
I want a little heat, but I don't want it to kill the judges.

I'm just not a one-pony cook.
