第一道街头小吃
The first street-food dish,
我改良的芙蓉蛋 也就是咸蛋卷
my version of egg fu yung, or savoury egg roll.
我在大街上
I'm on the street,
我将为你们烹调一道我最喜欢的街头小吃
I'm going to cook you one of my favourite street-food dishes.
它来自台♥湾♥ 叫做"咸蛋卷"
It's from Taiwan, it's a savoury egg roll,
下面我来示范做法
and this is how you do it.
我准备了一些香菇 细细切碎
I've got here some fragrant shiitake mushrooms, finely chopped,
还可以用半个甜红椒 去籽
maybe half a red pepper, just de-seeded...
然后切成粒
and then finely diced.
很好 现在为了增加烟熏风味
Fantastic. Then for fragrance and smokiness,
加一点刚刚切碎的培根
some bacon, just diced.
架起锅 倒进油
Wok on, oil in.
在台♥湾♥ 这种食物被摆在街边卖♥♥
Now in Taiwan they would serve this on the street,
你能闻到
and you can just get
猪肉或鸡肉的香味
whiffs of the fragrance of the pork or chicken,
各种原料都香气四溢
lots of different aromatic ingredients,
很容易就能吸引你到摊子上
and just entice you to their stall.
放进培根
In with the bacon...
培根要煎得脆脆的
You just want a lovely crispiness to the bacon,
最好是边缘上出现好看的棕色
just to kind of get a lovely brown on the edges.

That's ready. The mushrooms are brown,
培根煎得脆脆的 而辣椒还很爽脆
bacon's a little bit crispy and the peppers are still crunchy.

I'm just going to scoop this out onto a plate.

Next, five whisked eggs.

And then in with the

Now, with this recipe you can make two omelettes,

and at this point,

Now the seasoning

light soy sauce and a pinch of ground white pepper.

Just give that a few seconds.

What I really want to get is a lovely brown on one side,
觉得差不多 就可以翻面了
and when you're confident enough, just flip it over.
接着 切一些葱 然后就可以装盘了
Next, slice some spring onions, then we're ready to serve.
放在盘子上
So, onto the plate.
在蛋卷里放一些葱
Now, inside the omelette, a few of the spring onions,
一小把煮熟的鸡丝
a few handfuls of shredded cooked chicken,
也可以加更多食材
and for even more substance,
一些刚切好的蜜烤火腿
some honey-roast ham, just sliced.
然后折起蛋卷 像这样
And just fold the omelette, like that.
蛋卷将搭配一种爽口的浓稠酱汁
I'm serving this with a vibrant jammy relish
一些灌装的烤红甜椒
of grilled sweet red peppers from a jar,
加上甜辣酱 挤一点柠檬汁
sweet chilli sauce and squeezed lime,
再粗略地搅拌一下 酱汁就好了
all roughly blended together
马上就完成了
and ready in seconds.

Now, the way you choose to eat this dish is really up to you.
你可以把它切开沾着酱料吃
You can cut it up and then dip the pieces in that sauce,
也可以把酱淋在上边吃
or you can have that drizzled,
你还可以用餐巾或纸包着带走吃
or you can have that taken away wrapped in serviettes or paper,
我们在台♥湾♥就是这么吃的
which is how we do it in Taiwan,
可以拿着去上班
and then off you go to work.

That's my Taiwan-style savoury egg roll, aka egg fu yung,
也叫做芙蓉蛋
with red pepper and chilli relish.

香酥鸭是我最喜欢的街边小吃之一
One of my favorite street-food recipes is crispy fragrant duck,
这是一道台♥湾♥美食
and this is a Taiwanese delicacy.
在台北夜市上
In stalls in Taipei you
你可以看到许多挂着的香酥鸭
have wafts of this in the street night market.
这是我改良的香酥鸭
So this is like my version of crispy aromatic duck.
不是很健康 因为它是油炸的
It's not really healthy, deep frying isn't,
但是非常好吃
but it's really delicious.
我准备了两条鸭腿
So I've got two duck legs.
撒上一点五香粉 肉桂和姜
Sprinkle on some five-spice powder, cinnamon and ginger,
这些都能在超♥市♥里买♥♥到
all available in the supermarket.
这就是所有用到的香料 接下来
Now that is all the spices. To go with that,
加一点点绍兴米酒
a little bit of Shaoxing rice wine,
大概两汤匙 也可以用干雪利酒
about two tablespoons, or you can use dry sherry.
然后 加一汤匙辣椒酱
Next, add a tablespoon of chilli sauce,
加点生抽增加咸味 至于甜味
light soy sauce for saltiness, and for sweetness,
加两汤匙左右的蜂蜜
some honey, about two tablespoons.
把腌料抹在肉上
Just rub the marinade into the meat,
当然你也可以这样腌鸭胸肉
and of course you could do this with duck breast as well.
接下来就尽量长时间的腌制
Then what you do is marinate it for as long as possible,
最好是放在冰箱里腌一晚上
in the fridge overnight is always best,
但即使你没那么有空
but even if you don't have that much time,
烹饪前腌制20分钟就足够了
even 20 minutes just before cooking is enough.
加两瓣蒜
And two cloves of garlic.
放入烤箱 温度180度 烤十分钟
Put this in the oven for ten minutes
随后升温至220度
at 180 degrees, then up the heat to 220
使鸭皮酥脆
to crisp the skin.
现在已经开始烤了
Now, while that's in the oven.
台♥湾♥香酥鸭的配菜
In Taiwan we have crispy fragrant duck
是"大根"沙拉 或者叫腌萝卜沙拉
with a delicious daikon or white turnip pickled salad,
我现在来试试仿制那种沙拉
so I thought I would try and replicate that.
