And this is certainly a dream recipe.
我要做一道清蒸海鲈鱼
I want to cook you my steamed sea bass
配生姜青柠啤酒酱
in a ginger, lime beer sauce,
这做起来非常简单
and it couldn't be simpler.
划几个切口
Slice a few slits.
先划一边
One side.
再划另一边
And then the other.
我会把鱼头留着
And I'm going to keep the head on

because in Chinese tradition,

Next slice some ginger...

Just big enough so they fit into the slits of the fish.

So the ginger's gone into the slits.

And now all we do is just place it

Before we steam the fish,

I'm going to add a little bit of Shaoxing rice wine.

So about a tablespoon.

In Chinese cooking, Shaoxing rice wine is a classic seasoning

for fish and meat dishes,

adding bitter-sweet flavours.

Next, lay some finely sliced spring onions on the fish.

Steam over boiling water for seven to eight minutes

until the fish is opaque.

known as Yin and Yang.

The sea bass is very yin,

and the ginger and rice wine which I've had a splash of that,

they are very, very yang.

This is the perfect balanced dish,

and in Chinese cooking,

we are always trying to achieve this perfect balance.
让我们来看看海鲈鱼做得怎么样了
Let's just check on the sea bass.
海鲈鱼看起来很棒 已经蒸熟
The sea bass is lovely and it's cooked.
你们可以看到鱼肉已经变得不透明
You can see the meat has turned opaque,
鱼眼已经变白
the eyes have turned white,
鱼肉十分软嫩
and the flesh is lovely and flaky-ish.
稍微戳一戳便能感到弹性十足
It just gives as you give it a slight poke.
下面来做酱 磨一些生姜末
And for the sauce, finely grate some ginger.
生姜末是热性的 即阳
This is the hot, or yang,
鱼是凉性的 即阴
to the fish's cool, yin.
为使菜肴更鲜美 磨一些诱人的青柠末
For additional freshness, some zingy lime zest,
大约两汤匙即可
two tablespoons should be about right.
现在我们要把炒锅烧热
What we want to do now is get the wok nice and hot.
我先把海鲈鱼放在这里
And I'm just going to place the sea bass...here.
把盘子稍稍放凉
Just let that plate cool slightly.
我做这道菜的秘密材料是中国啤酒
My special ingredient for this dish is Chinese beer.
这会给菜肴带来一种美妙的甜味
This is really going to add a delicious sweetness
很能衬托海鲈鱼的味道
and really compliment the sea bass.
如果你买♥♥不到中国啤酒
If you can't get Chinese beer,
也可以直接用淡啤酒
then you can just use a light lager.
锅已经烧热了
So, wok lovely and hot.
倒入花生油
In with some groundnut oil.
大约一到两汤匙
About a tablespoon or two.
把锅转一转
And then give this a good swirl.
然后快速放入生姜末
Then, very, very quickly, in with the ginger.
赶在生姜烧焦之前 小心地将鱼入锅
Before the ginger burns, put the fish carefully into the wok.
再加入一滴米酒或干雪利酒
Add a drop more rice wine or dry sherry,
一些生抽
some light soy sauce,
和青柠末 给菜提味
and freshen it up with lime zest.
最后加入啤酒
Finally, the beer...
不许喝 全倒进去
No drinking, just pour!
把部分啤酒浇在鱼身上
Just pour some of the beer over the fish.
烹饪过程中 部分酒精会蒸发
Cooking like this will burn off some of the alcohol,
但别蒸发过多 因为它是可口的酱料
but don't burn too much, because it makes a delicious sauce.
文火慢炖
So just let that gently braise,
让海鲈鱼吸收酱汁的风味
and let the sea bass soak in those flavours.
装盘之前 我们来切一些香菜
Now just before serving, we just want to chop up some coriander.
茎和叶都切碎
I've chopped the stalks and the leaves,
然后全部撒入锅中
and just throw that all into the wok.

And that's ready to serve.

Now to go with the sea bass,

I've got some wild rice and basmati rice.

The wild rice adds a nutty flavour and bite,

The rice is going to allow you to soak up

all those delicious flavours from the beer, the ginger,
