Sichuan dishes are found all across restaurants

and some of them might not be the authentic versions.

So, I'm going to show you one of my favourites,

Sichuan orange beef - and it's really authentic in flavour.
首先准备上好的菲力牛排
I've got a gorgeous piece of beef fillet here
准备酱汁将其做一下简单的腌制
and I'm going to make a simple marinade.
准备生抽少许
I've got some light soy sauce.
从瓶中倒出一些即可
Just a couple of glugs of that.
加入蜂蜜作为甜味剂
And some honey for sweetness.
水果的话 当然要有一个鲜橙
And for the fruitiness, of course, a fresh orange.
橙汁会使得味道更香 更甜
This is going to provide the tang, sweetness
果味更浓郁 而且如果把牛肉放在
and fruitiness, and in fact, if you keep the beef marinading
果汁中腌制够久 真的会使肉质鲜嫩
in some fruit juice for long enough it really helps tenderise it.
烹饪肉类和鱼类时的黄金法则是
Now, golden rule when you're cooking meats or fish,
加入一些绍兴米酒
we add a bit of Shaohsing rice wine,

or dry sherry if you have it.

Then a little bit of pepper - just a little bit.

Then in with the meat.

You can use a thin frying steak if you have it,

or a gorgeous fillet like this

and just give the meat a lovely massage.

It helps to try and absorb all those flavours -

the sweet, the sour, little bit of salty.

There's something very, very therapeutic

about massaging a good piece of fillet.

I've got here some ground nut oil.

You can use vegetable oil, sunflower oil.

You know the wok's hot enough

when you start to see a little bit of smoke just coming off
热得差不多了
the surface of the oil
有时候也会看到油开始发亮
and sometimes you can see the oil glisten as well.
油开始发亮了 也说明热好了
When it starts to glisten, you know that it's ready.
油温恰到好处
That's nice and hot.
放入牛肉
In with the beef...
就会发出滋滋声
and let that sizzle.
分别将两面煎成棕色
Brown it on one side and then brown the other side.
刚才的酱汁要留着
I'm just going to keep the marinade
因为我们等下要用它
because we're going to use that
来制♥作♥美味的调味酱
to help us create the gorgeous sauce.
我觉得现在可以将牛肉翻过来了
OK, I think it's safe to turn the beef now.
一定不要翻早了
Resist the temptation to turn it too early.
要煎成金黄色为止
You want a gorgeous brown on there.
我现在要把酱汁加进去了
I'm going to add the marinade now.
加一点就好
Just a little.
这个调味汁里面有蜂蜜
That sauce has got the honey in it,
它会慢慢蒸发 变成焦糖
and it's going to reduce down and caramelise
再加上米酒的作用
and it's got the rice wine,
可以使得味道变成苦甜参半的芳香
which is going to impart that bittersweet flavour and aroma.
我想要它像照烧一样
I want it a bit like the Japanese teriyaki,
让酱汁变的粘稠鲜亮
and it's got the sort of sticky glaze and the sticky sauce.
现在牛肉做好了
Now the beef is done.
我把它放在一边 静置一会
I'm going to put it to one side - let it rest.
现在锅还是热的
Now the wok is still hot,
我要迅速地倒入香菇片
so very quickly I'm going to add in the shitake mushrooms.
然后翻炒均匀
And then give that a good stir.
现在要向锅内加入一点水
Then at this stage I'm just going to add a little bit of water
水蒸汽能帮助煮熟香菇
to help the mushrooms cook and steam
还有利于蘑菇吸收
and allow them to soak up the rest of the flavours

that the beef left in the wok.

Lovely. We want the shitake mushrooms lovely and softened -

Gorgeous bit of the beef there.

Bit of salad.

Now this dish wouldn't be complete without fresh orange segments.

In the middle range of heat and are two of Rich's favourites.

I love those pickled, so good.

So, we've got the shoulder here.

This is where it hangs on the plant.

Inside we've got the heat production glands - in there -

and the placenta, around the outside there,
可随辣椒生长将辣味传递下去
is how the heat is carried down the length of the chilli.
